His Journey
At 45, Bérengère is a nutrition pro with a career that exudes authenticity and determination. Since adolescence, she has been passionate about cooking and health, and even if she first took the path of science (Bac +4 in SVT and food chemistry), destiny led her to marketing. But, surprise! In 2018, the passion resurfaced: she became a nutrition coach, wrote three books for Larousse editions.
The revelation
It was in 2019 that she decided to reduce sugar in her life. Bérengère says: "I tended to eat salty foods but not sweet foods! Having had gestational diabetes and having a prediabetic brother and father, I decided to react. Before starting, I did a lot of research on the subject (my scientific soul :) For me, that's what allowed me to get there. Understanding is the key to success!"
LOW GI recipes
Plus, I enjoy myself every day! This diet is not a diet but a healthier rebalancing of food. You can keep fat without gaining weight, I know, it seems surprising but it's true! I lost weight without frustration. Every day, I create low GI recipes , easy and quick because I have a demanding job and 2 children to manage!

Hot Red Cabbage and Smoked Trout 💜
Bérengère promises us: hot, red cabbage is easier to digest, more tender, and above all, much more fun on the plate. And then, the color – a sparkling purple that would make the most beautiful smoothie green with envy. Ready to impress the gallery (and your taste buds)?
For 2 cabbage adventurers 💜
Ingredients :
1/3 red cabbage – the authentic, the vibrant one!
3 or 4 slices of smoked trout - because chic is chic
Sesame and olive oil – a winning duo
Sesame seeds - crunchy inside
4 tablespoons of hummus - because we like to treat ourselves
Fresh herbs - coriander here, but let your inspiration run wild
The steps:
Hot stuff! Cut the red cabbage into thin strips and steam it for 15 minutes – it should be as tender as a confession.
Jump into the pan! Sauté the cooked cabbage in a pan with a spoonful of olive oil. Add the trout pieces, stir gently, and let everything mix lovingly for 2 minutes.
A touch of madness! For the finish, add a teaspoon of sesame oil off the heat. Serve your creation with a good spoonful of hummus, sprinkle with sesame seeds for crunch and fresh herbs for a touch of freshness. A little pepper, and presto, it's ready!
Bérengère’s recommendation : No need for salt, the trout already does the job.
